3 egg whites beaten
1 cup grated low fat cheddar cheese
3 cups cooked quinoa or brown rice
4 slices cooked bacon (remove fat by lying on paper towel)
2 cups cooked carrots mashed (or favorite veggie of choice)
3 teaspoon nutritional yeast (This can be found in bulk food aisle in grocery or health food store)
Preheat oven to 350.
Combine all ingredients. Mix thoroughly or place in Vitamix blender on low. Light oil a cookie sheet with olive oil. Roll mixture into small 2 inch balls and place on lightly oiled cookie sheet. Flatten each ball with a fork. Bake for about 8 minutes until lightly browned. Cool to room temperature and store as many as you will use in a week in container in refrigerator. Freeze remainder in one week batches. Will keep really well for 3 months (minimum) in freezer without losing quality.
